Simply Delicious Chicken Stock

Stop! Don't throw those rotisserie chicken bones out.
Grab a few more ingredients and make a delicious broth you can use for a warm winter soup and your favorite recipes this week or that you can freeze in a covered ice cube tray for use later.
Save a few bucks on a box of broth and have more control of the salt content. Here's what you need and how to do it.
rotisserie chicken bones (as is, no need to trim)
1 celery stalk
1/2 bell pepper
a fresh herb or two (rosemary & thyme are my favorite for this recipe)
salt to taste
pepper to taste
garlic powder to taste
Pour 2 cups of water into a stockpot on medium-high heat.
Place all ingredients into pot and bring to a slow-rolling boil.
Once it begins to boil, lower to low heat and cover.
Let simmer for an hour. Strain through mesh strainer and season additionally to taste. Add any seasoning you'd like but keep it universal enough to use in your dishes.
I hope you find many uses for this! If you're not using the broth immediately, then I recommend seasoning it very well, pouring the stock into a covered ice cube tray and freezing it. That way, you can take one cube at a time to throw into veggie dishes, or a couple of cubes plus a little more water to make ramen. Yum!
